Data from the Coronary Artery Risk Development in Young Adults Study, suggest that diets high in fiber may protect against obesity and cardiovascular disease by lowering insulin levels. This multicenter population based study evaluated change in CVD risk factors over ten years among 2,909 healthy adults 18 to 30 years of age. Researchers saw associations between dietary fiber and decreased body weight, waist to hip ratio, fasting insulin and 2 hour postglucose insulin adjusted for Body Mass Index.
